From one valley kitchen to five valley trails

is a kept path. On the 2021 Wix snapshot it introduced a family cooking school on a private bush property in Kangaroo Valley, with a hospitality-teaching background and a 2010 start date. We are not going to retell that biography. The rebuild brief forbids republishing named people’s profiles or words from the archive. The sentence you need is shorter: this domain used to be a single-valley kitchen. It is now a five-valley map.

What we verified

Wayback’s availability API still shows homepage captures from 20 February 2011 to 14 May 2026. A full CDX dump (, , ) could not be stored on 22 October 2026 because the Internet Archive CDX endpoint returned 503 and 504. We therefore read the richest reachable HTML:

• 3 March 2013 — custom CMS. Cooking classes, farmers-table lunch, packages, food-and-wine tours, contact, FAQ, terms.
• 16 January 2021 — Wix. Workshops, events, how-to-find-us, sample menus, corporate team builds, cart.

Both generations sit in Kangaroo Valley, New South Wales, on the Southern Highlands / South Coast hinterland. That is not Yarra, not Barossa, not Hunter, not Clare, not Tamar. Wine Australia’s GI register lists a Southern Highlands GI; it is a different geography from the five hubs.

Parking and spam paths from the later parked window are excluded from the URL map.

Why the site changed

The Wave L brief asks for an organic, citable guide to food and wine trails of Australian valleys — Yarra, Barossa, Hunter, Clare, Tamar — at Capes-tier depth. The honest way to honour the archive is not to pretend the old school is still taking bookings. The honest way is to keep the clean URLs, 301 the messy Wix leftovers, and write new pages that a traveller can use without being sold a class.

So is now a trail-method guide. is now a produce-skills guide. is now a getting-to-the-five-valleys page. is now a seasons page with no invented programme. is this explanation.

What did not survive on purpose

Testimonials, gift vouchers, payment, cart, copy-of-cooking-classes, corporate team builds, sample menus, class schedules. Those were either commerce, leftover Wix slugs, or quote pages. Exact-match 301s live in . Unknown leftovers 404 with the footer still attached.

Facts about the five valleys are cited to Wine Australia, Visit Melbourne, Visit NSW, South Australian Tourism, Discover Tasmania and Wine Tasmania. Distances are their distances. Cellar-door counts are their tourism figures, labelled as such. Everything else is method.

What “reframe evergreen” means in practice

It means is seasons, not a 2021 dinner. It means is skills, not a Moroccan timetable. It means is how to read a van, not a Kangaroo Valley pickup. It means is five public approaches, not a private-property pin. It means this page is a provenance note, not a restored biography.

It also means we do not owe the parked-domain years a soft-404. Unknown spam paths 404 with a footer. Messy Wix slugs 301 once. Clean paths stay and do new work. That is the URL policy in docs/URL_MAP.md. The human version is: we kept the doors that were real, and we changed what you find when you walk through them.

A short chronology without a restored cast

2011: Wayback begins capturing a Kangaroo Valley cooking-school site. 2013: a custom CMS sells classes, packages and food-and-wine tours. 2021: a Wix site sells workshops and long-table events on a private property, with a how-to-find-us page that forbids walk-ins. 2024–2026: the domain parks; those paths are excluded as spam. 2026: this rebuild keeps clean URLs, 301s the messy ones, and writes five public valleys.

No chef name. No testimonial. No class price. No restored phone number. The chronology is enough to honour the brief’s “verify which valley the archive covered” note. It covered Kangaroo Valley. It now covers Yarra, Barossa, Hunter, Clare and Tamar. The path is the hinge between those two sentences.

What we owe the next editor

If you open these files in Keystatic, you will find Markdoc, not a restored Wix block. Keep the independence sentence. Keep the 18+ bar. Keep the refusal to invent hours. If a primary source moves, change the link and the sentence that depends on it. If a guest-post brief asks for a ranking, decline. If a well-meaning colleague pastes a testimonial from 2012, delete it. The rebuild is only as honest as the next save.

Kangaroo Valley remains a real place with a real food culture on official Southern Highlands channels. It is allowed to be mentioned as provenance. It is not allowed to become a sixth hub with invented farm stays. The five valleys in the brief are enough work. This path exists so no one has to guess why a cooking-school domain now talks about Clare riesling. The answer is on the page: keep the door, change the room.
